Veal Salad



1/2 lb veal fillet

1 T tomato paste

2 1/2 oz sherry

4 oz button mushrooms

4 oz cooked ham

2 large green peppers

1 Recipe French dressing*




Sauté veal in olive oil until golden brown  Add shallot and cook for 2-3 minutes  Add sherry and tomato paste; cover and simmer 5 minutes  Add mushrooms and cook for five more minutes  Cool  Cut ham into strips  Slice, blanch and refresh green pepper  Add dressing and tomatoes




*French dressing




2T Wine Vinegar

6T Olive oil

1t Salt

1t Pepper


Pinch of Thyme

Pinch of Marjoram

Pinch of Parsley

Anchovy paste
